Crispy Fish with Pear Salsa and Sauteed Squash

The title of this post is misleading so don’t be fooled into thinking that I made a culinary school approved meal here.  Weekday dinners are sometimes a challenge for me.   There’s just not enough time or energy left after the regular work day to fix a fancy dinner.     But, last night, I took some short cuts and it turned out pretty good.

Do you remember that salsa I made a while back?   Well, there was just a little bit left and I decided to add a couple of seriously ripe pears to it.   I love fruit salsas.  All I did was add the pears.   Easy.

Then, I had a ton of yellow squash from the last couple of week’s CSA boxes.   It didn’t matter what was for dinner tonight … we were going to have squash with it.   Simple saute … olive oil, onions, garlic, salt and pepper.

And, cheater alert, this fish is straight from the freezer.   Gordon’s Crispy.   Sue me.   It tastes good and is easy.

Adding the pear salsa was the perfect touch of fresh to what would have been a cafeteria-style fishstick dinner.   I almost feel good about eating freezer fried fish now.   I seriously just ate the pear salsa by the spoonful — it was delicious.
