Easy Side Dishes

Sometimes, you don’t have to be a culinary genius to get the job done here at Fresh Veggies in the Desert.   Just cut up some carrots and turnips (or other random root vegetables) and sprinkle with olive oil, balsamic vinegar and honey.    Bake at 400 for about 45 minutes.

The rest of dinner looks pretty good, too.   But, the carrots are awesome.    Not awesome enough to make turnips my favorite but awesome enough to get me to eat a couple of them.

  1. That looks delicious. Sometimes keeping it simple really does the trick. I’ll need to try this–I have away a bunch of turnips at work last week just to give them to a good home!

  2. I’ve had luck roasting turnips and squash with whole garlic cloves, tossed with olive oil, salt and pepper. The garlic cloves changed the whole thing and now my daughter will eat anything with roasted garlic in it. Smaller chunks might make the turnips seem less bitter.
