I am stuck. I don’t know what to do with these eggplants.
I have tried fried, grilled and baked. But, I am not a fan of the eggplant. The texture is too bleh. Even Pinterest didn’t inspire me. I think I might have to throw in the CSA Veggie Towel and give these (and any future ones) away.
Any suggestions? Recipes? Secret tricks of the trade in order to make eggplant more appetizing? Help!
