Eggplant Challenge

I am stuck.    I don’t know what to do with these eggplants.

I have tried fried, grilled and baked.   But, I am not a fan of the eggplant.   The texture is too bleh.   Even Pinterest didn’t inspire me.  I think I might have to throw in the CSA Veggie Towel and give these (and any future ones) away.

Any suggestions?   Recipes?   Secret tricks of the trade in order to make eggplant more appetizing?   Help!

  1. oh i wish we lived nearby! i love eggplant! i just grill with olive oil or roast and do the same thing……..

  2. I like to chop it up and throw it in a stir fry with onions, soy sauce, siracha (of some other spicy pepper), garlic, and olive oil. Great with rice.

  3. Salting to remove bitterness and then grilling and topping with salsa verde is tasty. But giving produce away is a good way to keep and add friends…maybe that is the best dish…

    • I’m willing to continue experimenting but I have a feeling that I’m just not an eggplant person. I can easily share with someone who is and feel a whole lot better about the deal. I like that dish considerably more.

  4. Find a good eggplant Parmesan recipe! So delicious. Our moussaka. I like mine rubbed with salt, let it sit for an hour, then grill it. Add grilled red peppers and some feta cheese with a little olive oil. Yum!!!

  5. I have a couple of recipes on my blog that have gone pretty well. I find that I like them best with Asian or Indian spices. When I had an overload last year, I split them in half and roast them. Then I scooped out the flesh and froze it and have used it during the year as an additive in sauces, etc..

  6. Serve fried eggplant to guests? I had a party (drinks, dessert, snacks) Monday night and made fried eggplant strips–used up 4 large eggplants and every bite disappeared. I like eggplant but have been struggling with the volume this year, so it was exciting to see them all go so fast!
